Ristorazione e web, l'incontro tra millennial e lavoro alla base del progetto di alternanza promosso da FIPE.

Parte ufficialmente a Firenze il progetto promosso dalla Federazione Italiana Pubblici Esercizi in collaborazione con TripAdvisor, TheFork e Foodora per consentire ai ragazzi di mettere in pratica, tramite un percorso di alternanza scuola-lavoro, il proprio expertise sulle nuove tecnologie che stanno profondamente cambiando il mondo della ristorazione.

Un momento dedicato ai giovani, con protagonisti i giovani. Si sono ritrovati questa mattina, presso l'IIS "Galilei" di Firenze, i ragazzi che presto entreranno in azione in diversi bar e ristoranti toscani per mettere a frutto il loro "potere digitale" apprendendo sul campo funzionalità ed usi dei nuovi strumenti che stanno rivoluzionando le modalità di gestione delle imprese. All’incontro erano presenti anche Aldo Mario Cursano, Vice Presidente vicario di Fipe e Presidente di Fipe Toscana, Gabriele Toccafondi, Sottosegretario al Ministero dell'Istruzione, dell'Università e della Ricerca, Valentina Quattro, Associate Director Communications e Portavoce Italia di TripAdvisor, e Stefano Gemmi, dirigente scolastico dell'istituto fiorentino.

Entra così ufficialmente nella sua fase operativa il progetto “Ristorazione 4.0, la buona scuola è servita” annunciato all'ultima edizione di "BTO - Buy Tourism Online". Il progetto nasce in collaborazione con TripAdvisor, TheFork e Foodora per favorire una proficua alternanza scuola-lavoro attraverso il reciproco scambio di attitudini, competenze ed esperienze tra studenti, imprese della ristorazione e protagonisti della web economy: un nuovo modo di "accompagnare" le giovani generazioni nel mondo del lavoro rendendole protagoniste e "motori" del cambiamento, tecnologico e culturale, che costituisce una delle presenti e future sfide per il mondo dei pubblici esercizi. Si parte con l'IIS "Galilei" di Firenze: primo step della fase operativa, le lezioni ai ragazzi tenute dagli esperti di Fipe, TripAdvisor, TheFork e Foodora sulla gestione delle recensioni e delle prenotazioni on line, sulla digital presence delle imprese della ristorazione e sul food delivery. Un programma che prepara gli studenti rendendoli pronti per portare a compimento il loro percorso di alternanza scuola-lavoro all'interno di bar e ristoranti del capoluogo fiorentino e della Toscana.

"Siamo entusiasti di poter dare concretamente inizio a questo progetto, che permette ai ragazzi di sviluppare una buona e proficua alternanza scuola-lavoro - è il commento di Aldo Mario Cursano, Vice Presidente vicario di Fipe e Presidente di Fipe Toscana -. Un percorso virtuoso che si basa sulla complementarietà tra scuola e impresa e sullo scambio reciproco di competenze. Con l'avvio della fase operativa gli studenti diventeranno la "longa manus" nella gestione dei social network e degli strumenti digitali di tanti pubblici esercizi del territorio, dalla gestione delle prenotazioni on line al monitoraggio delle recensioni, dal miglioramento della presenza sul web alle nuove frontiere del food delivery. Un nuovo, importante passo a supporto della digitalizzazione delle nostre imprese ma anche un’occasione per tanti ragazzi di vedere applicati nella pratica i nuovi strumenti che stanno cambiando la gestione delle nostre imprese".

“L’Alternanza scuola-lavoro negli ultimi due anni è diventata una realtà del sistema d’istruzione, e si sta consolidando, ce lo dimostrano le tantissime esperienze raccontate dagli imprenditori e da ragazzi e docenti che intraprendono percorsi seri di alternanza”, ha dichiarato il Sottosegretario di Stato al MIUR Gabriele Toccafondi. “Come lo è il percorso che prende il via oggi grazie alla collaborazione positiva tra Fipe, TripAdvisor, TheFork e Foodora, un esempio di una utile sinergia tra il sapere, il saper fare e il saper essere. L’alternanza ha la forza e la capacità di mettere insieme questi tre aspetti, che per troppi anni non hanno dialogato. L’alternanza fatta bene è scuola a tutti gli effetti, aiuta a conoscere di più la realtà, fa fare esperienze vere ed è fondamentale per affrontare il mondo del lavoro o per orientarsi nelle scelte del post diploma”, ha concluso Toccafondi.

"Spesso i ristoratori ci dicono di non avere tempo o modo di lavorare alla promozione online del loro ristorante, ma allo stesso tempo si rendono conto che si tratta di un aspetto importante per attirare clienti” ha dichiarato Valentina Quattro, portavoce di TripAdvisor in Italia. "Un recente studio ha infatti messo in evidenza che circa la metà dei ristoratori investe meno del 10% del proprio tempo alle attività di marketing e la maggioranza (78%) ritiene di dover fare di più per promuovere la propria struttura. Per questo motivo questa iniziativa è positiva per tutti: gli imprenditori che avranno un aiuto concreto nella gestione online della propria struttura, gli studenti che supportati nel loro percorso formativo ricopriranno nuovi ruoli professionali che la digitalizzazione ha reso fondamentali, Fipe che conferma ancora una volta quanto il percorso di accompagnamento all'innovazione nei confronti della categoria che ha intrapreso sia indispensabile e noi, che ribadiamo ancora una volta quanto TripAdvisor sia per le strutture uno strumento incredibile e utilissimo di promozione a livello mondiale”.
